White beans are a wonderful source of nutrients, fiber, and protein. They are quite versatile and can be used in whole form as part of a soup, stew, or vegetarian dish. They can be blended into a dip such as hummus, and they can be used to make burgers. A lot of my friends have had vegetarian burgers, usually made with black beans, and this is the same concept with slightly different ingredients.

I created this white bean slider recipe when we were looking for ways to add more beans into our diet. These mini burgers are tasty, hearty, and cute as pie when placed on a mini bun or over a salad. They contain nutrient dense quinoa as well which adds to the benefits of eating them!  They have a creamy texture on the inside and a crispier coated outside. They work well as a snack all by themselves or they can be part of a full entree; I serve them with another vegetable such as roasted or steamed green beans, broccoli, carrot fries, or even a side salad. I don’t eat them on bread, but you can eat them on a bun or inside a wrap. No matter how you decide to eat them, they are a nice alternative to a traditional burger. I can’t eat avocado anymore, but if you are a fan…I highly recommend stacking slices or avocado or guacamole on your burger! Hope you like these!
