Quinoa is a Superfood that many people have heard of, but not everyone has tried it for one reason or another.  If you are looking for an easy and enjoyable recipe to get your quinoa adventure rolling, this is a great place to start!  My Fall Quinoa Salad is similar to a Tabbouleh made with couscous, but it has slightly different ingredients and flavors.  This recipe will please almost any crowd, large or small.  If you’re hosting a party, it is a fabulous way to offer vegetarians and vegans a protein rich option and it works really well as a nutritious side dish.    

If you’ve never had quinoa, it is a nutty flavored, gluten free grain that packs iron, fiber, and protein in each serving.  You should use a ratio of 2 cups of water (or stock) to every 1 cup of dried quinoa.  I recommend using a fine mesh strainer to wash the quinoa; this helps remove the extra bitterness that is sometimes present on the surface of the grain, even when it says ‘pre-washed’.
