As the cold weather approaches, I find myself craving more and more soups, stews, and comforting dishes.  I am also always on the lookout for a healthy, hearty, and cozy meal that can be ready in under 30 minutes.  With all this in mind, I created a new soup recipe earlier this week that took just under 20 minutes from start to finish!  It is made with just a few healthy ingredients and was both hearty and cozy in our first cold night of this fall season.  I used potatoes, cauliflower, onion, dill, chicken stock (can use vegetable stock) and a few other seasonings to make this creamy soup. Both the potato and the cauliflower help add a velvety texture to the soup, not to mention all the good-for-you nutrients. 

The first time we ate it, we had it as an appetizer to our dinner, but when we had the leftovers for lunch the next day, it became the main course.  Since I am eating for two these days, I needed some extra protein to get me through the midday.  I added 1/2 a cup of diced chicken breast (leftover citrus and basil chicken) to the soup and it was delicious.  I really enjoyed the mixture of different textures.  My husband told me that he had it with a side salad.   I hope you enjoy this new soup!
