I have always been a fan of vegetable sushi rolls since I discovered them in college. I had a lovely, Japanese friend in college and she taught me how to make some amazing things…including sushi! I was thrilled that I could now feed my sushi cravings and save money all at the same time. Since I was never into those raw fish sushi delights like my mom and many of my friends, it really wasn’t that hard to make sushi rolls from home. Earlier this year, I realized you can use cauliflower rice, a staple in my house, to replace the rice inside the sushi rolls. This was an amazing discovery! Low carb sushi rolls…what a dream come true. According to my husband, who does not like cauliflower much at all, you can’t really taste the cauliflower inside these rolls. So, below you’ll find my recipe for making vegetable sushi rolls; I included instructions for using regular rice as well as cauliflower rice. The image at the top of this page is the white rice version and the one below this paragraph is the cauliflower version. I hope you like them!
