In the fall and winter seasons, I often find myself craving creamy soups and hearty stews. Last winter, I made this recipe to bring comfort during a snowstorm. This recipe is also a wonderful way to pack in the vegetables without even realizing it! Once it is blended together, the flavors and colors merge into one delicious, velvety, satisfying soup.
