In the fall and winter seasons, I often find myself craving creamy soups and hearty stews.  Last winter, I made this recipe to bring comfort during a snowstorm.  This recipe is also a wonderful way to pack in the vegetables without even realizing it!  Once it is blended together, the flavors and colors merge into one delicious, velvety, satisfying soup.  If your kids eat soups, they may like this one that is full of healthy goodness.   

The first time I made this soup, we had it on it’s own as a ‘vegetarian’ dinner, but it also goes well over rice, with added chunks of chicken, or with some type of bread or quinoa.
