I have been struggling with snack ideas this last few weeks and have come to the conclusion that I don’t want to waste money on expensive allergen free snacks at the store.  I also don’t want to only eat fruit and vegetables for snacks since they are a major staple in my meals as well.  I need something else to temp my senses at snack time – so, bean dip came to mind when I was eating my crackers the other day.  I wanted to make it zesty, so I added in the leafy greens which have a wonderful pesto like aroma (probably from the arugula).  When I blended this recipe together and tasted it for the first time, I truly felt that I had achieved my goal!  Temptation for something healthy but different; inexpensive to make; will fill me up with protein and fiber based ingredients, and lastly…it tastes darn delish!
