This recipe came about years ago when I was trying to find ways to add richness and creaminess to my macaroni and cheese (without adding oodles of expensive vegan cheeses!). At the time I was able to eat pumpkin and I loved it, so much. Naturally, it was a good solution to my problem and provided the richness and creaminess I needed. This is a wonderful way to add vegetables to your child’s diet as well.
