Breaded chicken is something that can be used in so many different recipes. You can eat it just as breaded chicken. You can use it in a chicken parmesan recipe. You can make chicken nuggets for the kids! The possibilities go on… So, I created this breaded chicken recipe as one possible way to make breaded chicken when you’re on a gluten free, egg free diet like me. Here it is being served with mixed veggies (cabbage, leafy greens, shredded carrots, etc.) and quinoa. If you are watching your carbs, you can leave out the quinoa or only put in a small amount. It is a satisfying and filling meal.
