Homemade Turkey Apple Sausage Patties

I like to have some meaty protein in the mornings between when I have breakfast and lunch.  This mid-morning snack helps me get through the first half of the day without feeling completely famished!  Since processed meats like bacon and sausages are usually very salty and can be expensive if you buy the good quality ones, I decided to try making my own at home.  This recipe is pretty easy and freezes well.  I make a batch and then keep them in the freezer; I will take out 1 or 2 at a time and heat them up.  Simple, satisfying, and cost-effective!  Not to mention, low sodium, gluten free, egg free, soy free, nut free, and dairy free.

Ingredients
  1. 1 lb of ground turkey, dark meat works best or you can do a blend
  2. 1 medium sized apple such as Gala, Fuji, or Rainier) chopped into 1/4 inch pieces or smaller
  3. 1 Tbsp of dried parsley
  4. 1/4 tsp of ground sage
  5. 1/8 tsp of kosher salt
  6. 1/2 tsp of dried rosemary
  7. 1/8 tsp of black pepper
  8. 1 Tbsp of onion powder or you can mince 1 small shallot
  9. 2 flax eggs
  10. 2 Tbsp of olive oil
Instructions
  1. Preheat your oven to 375 degrees and prepare a large cookie sheet with a layer of foil with a layer of parchment paper on top.
  2. Mix all your ingredients together in a large mixing bowl. You can use a large spoon or your hands.
  3. Scoop out 1/3 cup of mixture for each patty. Place it onto the cookie sheet and press it down with the back of a mixing cup or your hand so that it looks like a slider/mini burger.
  4. Bake in the oven for 30 minutes.
  5. Once they cool, you can wrap in individual servings using foil and then store in a ziplock bag. You can also use a glass container or other storage container of choice as long as it is well sealed.
Notes
  1. These can be grilled too! Just cook them just like burgers.
